Holiday Bite-Sized Treats: How to Utilize Christmas Leftovers into NYE Appetizers

Party snacks needn't be elaborate, so New Year's offers a perfect opportunity to clear the decks. The key rule is to keep things to just one bite—guests don't want to manoeuvre a fork. Guests are looking for a comforting taste of hearty fare with a decadent twist.
If you have a bit of cured fish left, place it on mini pancakes and top it with lumpfish caviar. Mini fishcakes are also just the ticket: Whether you've got leftover smoked haddock or flaked salmon, mix it through creamy potatoes, combine with dill, lemon, and caramelized onions, then roll in Japanese breadcrumbs and deep-fry.
You could also have a ball with Spanish croquettes. Prepare the white sauce up to days ahead, then use leftover ham, chicken, or foraged fungi for the filling. Whizz old bread into breadcrumbs to cover them, then cook until crisp. Sausage roll mixtures are another perfect use for those breadcrumbs, or use them as a coating for chicken pieces. For flavour, all you need a bit of lemon zest and thyme, and they'll taste so much more. As an aside, croissants make excellent crumbs, too.
One favourite thing at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Place some holiday meats in an sealed tub and store in the freezer. While you're at it, reserve some cranberry sauce and honey ham glaze in the fridge. When needed, thaw the meat, then pop it in a hot oven with the saved glaze for a short time. Let it cool and slice thinly, then lay on top of some artisan bread and assemble sandwiches with lots of cranberry sauce. Slice into small squares for a surefire hit.
Leftover turkey, meanwhile, could be turned into a zingy salad. You often have a bit of dark meat left over, and it's ideal for something punchy. Pull the meat, then crisp it slowly in a pan, and toss with leftover cranberry sauce thinned with lime juice, a spoonful of soy and a little chilli oil. Finish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be dressed up and ready to party with a big batch of fried potato cake. Combine all your leftover veg with herbs, then add salt and pepper and incorporate a binding agent. Cut out portions to about the size of small rounds, then store in the freezer. Reheat in a preheated oven for a few minutes and top with whatever you like—perhaps roast beef and grated horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
